Cheap Vegan Attack! – Spicy Tempura Asparagus Sushi with Vegan Spicy Mayo Sauce.

Our first attempt at vegan sushi came out so much better than I had hoped! We tempura batter fried a bunch of asparagus, rolled it up in some sushi rice (white rice, rice vinegar & sesame seeds), added sliced cucumber, avocado and topped it off with panko bread crumbs, Trader Joe’s Soyaki sauce (which is a godsend for flavoring anything) and Niad made vegan spicy mayo out of Trader Joe’s Unsweetened, Eggless, Dairy-free Mayo & Sriracha. For about $10 we just ate about $60 worth of sushi.
